The client
This is one of London original companies which offer a collection of different wine bars across their estate with over 40 sites based in and around the City. They offer a simple yet delightful, traditional British menu for their busy lunch time and evening trade using fresh food.
Already known as great purveyors of wine, they are now looking at improving their food offer in all of their sites and as a result are looking for a strong Head and Sous Chef for their sites to help move the business forward.

The role
With some sites having gone total refurbishment and brand new equipment, you will have all the necessary tools to propel yourself into your work and career.
You will be fully or partly responsible for the creation of a contemporary British menu in this (on average) 50 cover wine bar. Sites can turn over 250 covers over lunch and dinner, 6 days per week with the majority of sites Closed on Sundays!!!!!
You will an integral part of a brigade of up to 7 chefs on a day to day basis and you will be responsible for all kitchen management duties including; stock takes, rotas, ordering, GP management and menu costing to name but a few.
Ideally you will come from a background as either a strong Chef de Partie, Sous or Head Chef from a good quality fresh food restaurant or premium brand. You will be able to show the ability to create a seasonal British menu and manage a busy lunch time service.
You will be creative and will help with the continuing success of the site by keeping the menu fresh and to high quality.
